The rest of my Thursday went fantastically. I walked home during a gorgeous sunset over the Hudson River, got my eyebrows threaded and ended up having an awesome weight loss conversation with the lovely Indian women who run the spot in my neighborhood- they ended up making me try a piece of their homemade cheese that’s made with just milk & lemon! I adore NYC and how randomly you meet awesome people. Once I got home, I threw my gym clothes on and forced myself to do 30 Day Shred- I have been going back and forth about starting it again, and decided to stop making excuses. Yes, I’m beyond exhausted every night but it’s 20 minutes– SUCK IT UP! I even decided to jump right into level 2- let me tell you, I was moaning/grunting/screaming and John was laughing as he ate chocolate covered potato chips from Trader Joe’s. How supportive! I felt BEYOND amazing afterwards! I’ve gotten a little soft, but I am so damn proud of my muscles (and sweat, ew):

That has been from only 30 day shred, running, a super clean and high protein diet, and 5 lb weights. I’m pretty stoked to see how ripped I can get when I get bigger weights! **When I say high protein diet, I do NOT mean a “diet”, I mean just what I eat. I do not believe in diets and never ever have. Also, you can see I eat plenty of carbs- I just pay extra attention to make sure I eat enough protein!**

Dinner was a giant salad monster mess. I sauteed green beans, a bell pepper/onion mix & a Dr. Prager’s california veggie burger:

This got dumped on romaine lettuce & a cut up and nuked sweet tato. Topped off with organic ketchup and organic mustard- basically an inside out veggie burger!

Do NOT knock it til ya try it! A little while later after homework, packing, and spending time with my lovaaa, it was time to create my pumpkin protein shake-in-a-bowl!!

Go make this right now. Here’s how:

  • 1 ice cube
  • 1/2 cup canned pumpkin
  • 3/4 scoop vanilla protein powder
  • a little more than 1/2 cup unsweetened vanilla almond milk
  • 1/8 cup non-fat greek yogurt
  • cinnamon & pumpkin pie spice

Blend, pour into bowl, top with cereal & sugar free pancake syrup. I used 1/4 cup Fiber 1… and John threw on a chocolate covered potato chip to make up for laughing at me while I worked out! All about balance šŸ˜‰ I just made my first bowl of “overnight oats” which is hella popular in the healthy blogging world… we’ll see how they are in the AM! I will probably add more milk and heat them up because I need my hot oats after a run in the cold! Now I must go sleep with a happy belly full of pumpkin, and a warm boyfriend who makes my days significantly better, even after 5 1/2 years šŸ™‚

  1. I am SO making that drink this weekend! I would use soy milk since I don’t have almond and I have French Vanilla protein powder, but I think it will still be similar! Heck, I might go buy canned pumpkin tomorrow before class just so I can have it as a treat later.

    • I used to LOVE vanilla silk soy milk but they dont make an unsweeteend one like almond milk.. 40 calories for a cup and no sugar! soy milk does taste better though šŸ™‚ and im sure french vanilla will be DELICIOUS! the little bit of yogurt, 1/8 cup, really made it more thick like a milkshake!

I am loving creating healthy “desserts” because even though ive never been a dessert person, i know 99% of people are and i hope this helps to know you can have a dessert EVERY NIGHT if you make it healthy!
