Great run & roasting veggies

I’m an awesome food blogger and repeat meals and snacks most weekdays, it’s pretty impressive to be this boring. However, it’s super healthy, cheap and tastes amazing so that’s all that really matters right? Breakfast & mid-morning snack:

100 cal WW thin, 3 egg whites/1 egg, turkey bacon, organic ketchup

apple, PB & huge coffee w/ skim & splenda

It was absolutely gorgeous out yesterday so I switched my boots to my sneaks and headed out for a walk on my lunch with my coat, leggings, and the flowy top I wore to work because it was just going to be a casual stroll to soak up some sun and move the legs.. I felt so amazing and suddenly decided it was time for a run. It was one of the best outdoor runs I’ve ever had. I looked semi-normal since all you could see was my coat, leggings & sneaks… I knew it was a different situation underneath since my shirt and lack of sports bra were serving as my workout clothes. I don’t care, that run was legendary. I felt like my legs couldn’t stop even if I wanted them to. I took some pics to show how excited and awesome I look while running in a work outfit:

Insane. I politely used 80 paper towels in the bathroom to wipe off my sweat and came back looking like I hadn’t just ran a 3 miler on my break. I used to do it almost every day over the summer, but I came prepared with gym clothes and always knew I was going to be running. Refueled with an oatmeal mess (another delicious money saver!):

While walking home I had a Chobani mixed with PB2 and almonds again.. didn’t get a picture because I was walking and eating, a pretty common occurrence in my life. I will most likely get hit by a car because I am too busy enjoying my afternoon snack to look up and pay attention to traffic.

I had thought about roasting broccoli for the 1st time all day, but when I got home I remembered I had a 6 AM weight training session with the trainer at me and Caitlin’s gym… I also remembered how broccoli makes me 100x more gassy than usual, so I decided to roast green beans and a sweet potato instead! John came home to find me smiling and spraying my veggies away while dumping 80 pounds of garlic on them (I guess I didn’t care about garlic sweating through my pours at my weight session!). Please ignore my lack of bra wearing because my boobs are almost non-existent these days (MY FAVORITE PART OF LOSING WEIGHT!)

Dinner= roasted green beans with ketchup & parm cheese, sweet potato, salmon with goat cheese & mustard with a side of mushrooms, green peppers and hummus. Veggie-licious.

I have not been hitting my quota of 567 grams of protein a day lately, and my arm muscles are SERIOUSLY almost gone. That and the fact that I hadn’t lifted weights in weeks before this morning. So I had a little dessert of cottage cheese (tons of protein), frozen bloobs and sugar free maple syrup. I think I saw John gag at this concoction, but don’t knock it til you try it.


I have read that cottage cheese is one of the best foods you can eat right before bed as it takes a long time to break down and keeps your metabolism going all night! Sold.

I’m still feeling a little under the weather, but I was up by 4:30 this morning and got my butt to the gym for an awesome workout! I can’t wait to write about it tomorrow, and I can guarantee I will barely be able to type it because I will be SORE!

Do you ever roast vegetables/ potatoes?


This was my first time roasting vegetables, I think I’m in love. I love making baked sweet potato fries and I am making my 1st batch of butternut squash baked fries tonight!

I AM SO EXCITED FOR THIS WEEKEND! Lots of awesome workouts planned, running expo, meeting one of my favorite bloggers for frozen yogurt because she’s running the NYC marathon Sunday!!   1. I love roasting veggies..I enjoy meat as well so they are really good cooked with seasoned chicken! My fav is roasting potatoes, squash, zuchinni, onions cooked with skinless boneless chicken..all the flavors combine and it’s OH so YUmmy!! Roasted asparagus is outstanding as well!!. I don’t have big plans this weekend but am running my second half marathon next weekend!! Yay! Do you ever run races??? Hope you have a great night!! Brande

    • SO jealous that you are running a half! I havent done a race yet but my 1st one is 2 weeks from today, just a 4 miler! I’m excited!

  2. I love roasted root vegetables! Potatoes, onions, garlic and carrots. Drizzled and tossed with olive oil, salt and pepper. Toss in oven and in turn you have an amazing meal or side dish. Especially with a roasted chicken that has been rubbed with salt and pepper then stuffed with a few preserved lemons. Mmmm…..I’m drooling.

    I love running too!

    • Thank you so much! I aim for 100-130 grams of protein per day and I don’t think it’s hard at all.. I have egg whites in the morning plus whole wheat bread/ thins have some protein in them and if I have turkey bacon on hand ill throw that in.. when i eat oatmeal for bfast or lunch i add protein powder and/or egg whites.. i eat a lot of natural nut butters, nuts, greek yogurt and for dinner i always have lean chicken, salmon or tuna and i’ll add more egg whites if i need more protein! all healthy, easy ways to get more protein 🙂 I also use skim milk in my coffee when I drink it!

  3. I love veggies on the grill!! Red and green peppers and jalapenos!! YUMMO!! I like to chop up a grilled bonelss skinless chicken and the veggies, so good!! Love the blogs by the way!- Alisha

  4. so funny, I stopped posting many food pics because I do feel like I just repeat the same meals for all of a week 🙂

    I can’t wait to watch NYC either. I know it will make me crazy excited to run!!

    • Haha it’s just so much easier to plan and prep when you eat the same things all week! Oh well, I’m easily entertained 🙂 NYC was so amazing! Hungry Runner Girl & Skinny Runner looked and did amazing!!

  5. You seem like a really healthy person. I’m struggling with eating now. Your’e trying to get 567 grams of protein? Isn’t that a lot ? I’m just curious. If you have any thoughts-tips-advice on eating or dealing with struggles, you can email me if you like. I understand if you don’t want to talk though. I’m a mess; kind of underweight, not exercising at all really, depressed about it all, now starting to binge; but dealing with ibs-symptoms so bad that i can’t figure out what to do. So confused. I really don’t do well with nutritionists and doctors are so unaware or without knowledge. So frustrated, you know? Nice blog!
