Depressed Yet Delicious

The last few days have been rough. I’ve been feeling more sad and it’s hitting me a little more that my grandma is gone. She was our best friend in the world, and it’s been really hard not having her to call. I know it will get both worse and easier with time, it’s just hard to believe it’s already been over two weeks.

On a brighter note, I would love to share some delicious eats I’ve had over the last few days and a few awesome things that have happened. Thursday I took a rest day and just walked a little after work. I was craving comfort food, but wanted to keep it healthy since I had been doing so well eating clean all week. I whipped up a crazy good, super lightened up alfredo dish. I used:

1 pack tofu shirataki noodles (drain, rinse, soak up water with paper towels)
1 wedge Laughing Cow garlic & herb

Microwave rinsed and dried noodles for 2-3 minutes, then mix cheese wedge in til melted and mixed. For protein and veggies, I added broccoli, tuna, egg whites and another wedge of cheese, plus garlic salt. I cannot wait to make this again!

Friday I was lacking most food groups from my fridge, so I let myself have my favorite: vegetarian baguette sandwich from Macaron Cafe! I hadn’t eaten in about 6.5 hours due to work being crazy so I also had a side of sauteed mushrooms, beets and sundried tomatoes.

Also of note on Friday: SARAH JESSICA PARKER WAS IN MY STORE! She is the only celebrity I am obsessed with; after all, I moved to NYC after falling in love with Sex & The City! I was 10 feet from her but we aren’t allowed to act like we know who they are.. So sad.

I went to the gym after work for a 4 mile run. Sadly, my shins and knee were hurting so bad I had to walk some intervals and only finished 2.5 miles. I was so mad I literally threw on my coat and walked to the nearest running store to get fitted for new running sneakers. I had a blast! The girl was super knowledgeable and not pushy at all. I ran on the treadmill and she analyzed my stride; turns out I have a perfectly neutral stride and didn’t need over-pronating sneakers. The wrong sneaker is most likely what has caused my pain these last few months! I walked away with a new pair of Brooks Ghost 4 and a free pair of socks for using a MasterCard- score 🙂

The NY Running Company store is conveniently located above Whole Foods, so I picked up dinner. Healthy general tso chicken, chickpeas, tofu, beets, sprouts, etc. Followed by a bowl of cereal and watching tons of Netflix.

Today included an oatmeal raisin bagel sandwich, and a free sample of falafel and pita from a new restaurant.

Walked close to 5 miles all day, met up for coffee with Brenda, and ended my day with one of my favorite cuisines: Mediterranean! Whole wheat pita w/ egg, eggplant, chopped salad, hummus and hot sauce, and an arugula salad w/ apple, raisins, walnuts and goat cheese. I could live off this food.

And now I’m parked on my bed watching Netflix again. I’m catching up on one of my favorite shows, United States of Tara, and I forgot how great it is! Between that and Law & Order, I am beyond happy being lazy. Hope your weekend is going great!
