This week has been very orange. In terms of what I have been eating, anyways! I bought a can of pumpkin so I have been adding it into my oatmeal this week, plus I have created my absolute favorite salad ever. The combination of the vegetables, chicken, and especially the “dressing” is to die for. Warning: it is extremely random, as usual.
Romaine lettuce + grilled chicken + edamame + goat cheese + sweet potato chunks + baby carrots.
The best part is the toppings. I used a scoop of roasted garlic hummus and slopped it around, then a spoon of Trader Joe’s hot & sweet mustard. When this all mixes together, it creates an amazing, super healthy dressing for the salad! I ate this 3 days in a row, and I foresee it being in the rotation for good!
In workout news: my shins have hurt during every run this week. I did a 25 minute HIIT run on Tuesday morning where I only covered about 2.3 miles. I had to keep walking/jogging after my normal pace because they hurt so bad. I went to a new spin class Tuesday that I loved, then tried to run 3 miles Wednesday but only made it to 2. I am really discouraged and upset because I am supposed to be half marathon training. I’m up in the air as to what to do right now, but if I’m not meant to run a half marathon yet, I know there will be more in the future. The last month has been extremely sad and hard with losing my grandma, so my body could really be holding onto stress everywhere.
To get my mind off being down, I went to get sushi with Brenda and her work friends last night. We went to an awesome place on the Lower East Side where all the sushi was 50% off the already low price. I had 3 rolls: 1 avocado, 1 crab cucumber and 1 spicy tuna. The spicy tuna was soooo good, the best I’ve ever had!
We were sitting next to a Ryan Gosling look-alike, describing in detail what we would do if we ever saw him… it was hilarious.
Then, things got real.
I have wanted to try this ice cream place for so long! They only have vanilla and chocolate soft serve, but it’s the toppings that are completely amazing. I got the “salty pimp” which was a vanilla soft serve cone with caramel, dipped in a hard chocolate shell with sea salt. Oh, and they put BISCOFF SPREAD in the bottom of the cone!
Getting back to something HEALTHY, I was recently sent a pack of a new-to-me seed to try from Brittni! I have been obsessed with chia seeds for awhile now, but after seeing Bess post about Mila, I was eager to try. From the website:
