This week was fantastic in the workout department. Monday, Wednesday and Friday were 2-a-days, and I didn’t dread any of them! Plenty of Ripped in 30 and spin classes, HIIT and one of my new favorite sweaty workouts; incline walking on the treadmill holding 5 pound weights. I alternated random arm exercises while alternating inclines, between 5-9%. It’s tough! Try it!
After work tonight, my co-worker Sabrina and I walked around midtown east looking for a place to grab a drink and some food. We settled on a place I’ve wanted to try forever, Rosa Mexicano, and sat at the bar. Neither of us were super hungry and the entrees are pretty pricey, so we stuck with a gigantic tub of guacamole and salty chips, with sangria. The chips and guacamole were amazing, but the sangria was not strong enough. It has been a tough few days in the retail world, right before Mother’s Day, and we needed something strong. But overall it was the perfect little cheat treat!
I say cheat treat because I have been eating super clean all week and feeling great! After dinner out, I always crave something sweet. For some reason I usually don’t when I eat dinner at home, but something about being out to dinner makes me want it. Probably the fact that there are froyo and cupcake places on every corner in NYC…
I walked around for awhile on this perfect spring night, then headed home to whip up a dessert that was clean and healthy. I advise you all to purchase any of the items you may be missing so you can create this and enjoy a huge, clean dessert any night you want!
Chocolate Banana Soft-Serve w/ Crumbled Chocolate Protein Muffin & Chocolate Sauce
Soft Serve Ingredients:
- 1 large frozen banana, broken into pieces
- 1 tbsp unsweetened cocoa powder
- 1 packet Splenda
- 2-4 ice cubes
- About 1/3 cup unsweetened vanilla almond milk – may add more for thinner consistency
- 1/4 teaspoon Xantham Gum
Blend all ingredients in blender ( I have a Ninja). The Xantham Gum creates the thickness of soft-serve. I believe you could use more ice and more milk to make it thicker if you do not have xantham gum. Dump in bowl.
For the protein muffin/cake, I made a chocolate version to go with the chocolate banana soft-serve. My ingredients:
- 1 tbsp coconut flour
- 1 tbsp chocolate peanut butter protein powder
- 1 tbsp unsweetened cocoa powder
- 2 tbsp unsweetened apple sauce
- 1 egg white
Mix all ingredients into a larger sized coffee mug and microwave for 2 minutes. Let cool a bit, then crumble on top of soft-serve. I whipped up a quick little chocolate sauce to top the bowl with, which was just 1 tbsp unsweetened cocoa powder mixed with 1-2 tbsp sugar-free maple syrup.
Such a delicious dessert that totally cured my sweet craving! All for just about 325 calories! Full of healthy, clean ingredients!
